    Anyone know a source for fish bones for stock? Also I see a lot of whole fish at the various Asian markets around town, but I am never sure if they will clean it for you. Anyone have any experience here? I guess I can always do it myself...

    I know that Assi Plaza and H-Mart (different parts of Niles) sell fish heads pretty cheap. It's not the whole skeleton... but it can't hurt to ask. Go somewhere that does a lot of fish business and filets to order, and you may be able to say, "Hey, can I get the leftovers from the next six fish you filet?"

    Isaacson and Stein has fish heads/bones you can buy on display. Dirk's will give them to you for free if you call in advance and buy something from them.

    I second the recommendation for Dirks. You'll have to do virtually no extra clean up yourself.

    Recently I just bought some whole porgy for $3.99/lb and use that for stock - they're mostly bones anyway!

    Sound like that Dirks' deal is a great one.

    But just to have a more complete answer to the question, Fresh Farms on Touhy has fish heads 'n' bits for sale. I forget the price . . . .
