This past weekend we opened "Backcountry BBQ Supply" next to our restaurant (2 spaces south on Western). We have hosted BBQ Classes in our Pit Room (next to the restaurant dining room) for over 4 years, and we've outgrown the shared space. We built a new BBQ Classroom space, and added a retail element to the business - selling Rubs, Sauces, Smokers, cooking wood/charcoal, Premium BBQ Cuts of meat (same ones we use in the restaurant), Books, Thermometers (we're a licensed Thermoworks dealer), all the gadgets and goods you need to cook BBQ at home. Stop by on a Friday - grab your rub, your meat, wood, charcoal, gloves, sit and talk shop for a few, ask questions if you have any technique issues - then head home prepared for your Saturday cook (one stop shop).

This idea formed as demand built up for BBQ Retail from our classes. On Saturday, the 17th, we hosted our 500th BBQ Cooking class - commenced by bringing in Master Butcher Tim Mikeska from Taylor, TX to host a Sausage and Bacon class. We followed that up with a friends and family Whole Hog Pig Pickin' on Sunday.

The Backcountry BBQ Supply shop will be open after classes, which are held every Wednesday, Thursday, Saturday, and Sunday - with regular retail hours Friday-Sunday. Any other day, you can stop in the restaurant - and one of our restaurant staff will bring you over to grab anything you may need. If this kind of daily demand continues, we'll expand the hours.

It's been so great to see over 10,000 people in Chicago sign up to take our BBQ Course - educating beginners, helping pros become super pros, and even converting a few vegetarians along the way (into full blown carnivores) through delicious BBQ and an experienced Pit Crew.

Here are some pics from the class and the whole hog friends and family dinner:

I know you have a big crush on Texas BBQ, but using motor oil for sauce is going to far.

I believe only Sinclair oil is good for that, not Texaco.
