    Through no fault of my own, I'm now the proud owner of one metric crap-ton of mayo. I'd like to ask for some (oxymoronic) recipes that are somewhat healthy but give me a way to use this up.

    Yes, yes, I know.

    I have recipes for side dishes, but I'm looking for things that could qualify as a well-rounded meal if it wasn't loaded with cholestersauce. Meaty salads loaded with veggies and the like. Casseroles.

    My first thought were traditional dishes like cold tuna casserole, but you might also want to consider using mayo as an alternative fat in recipes.     I'd focus your attention on recipes from Russia, Argentina, and Japan. The Japanese izakaya chains seem to be especially cookoo for mayo. But, probably the quickest way to knock out a bunch of mayo is the Cantonese junk food classic, honey-walnut shrimp. Which should really be called mayo-deep fried mistake.

    I would make jamon croquetas and meat/veg kebabs with sauce of mayo, roasted pepper, garlic, vinegar or lemon juice, rice or roasted potato, toasty bread and olive oil.

    I'm with you, Brad. That stuff is a guilty pleasure of mine. In fact, for me no visit to Ron of Japan is complete without a lobster smothered in golden goo!

    Recently had Cantonese short ribs w/mayo that were 1 step away from a whopper. Even had shredded lettuce.

    The old Lao You Ju, now called Ding Sheng- which had quite a few very good dishes and needs a couple more visits to find more gems (an excellent seafood chow fun ordered crisp). But this was not among them.

    Chocolate mayonnaise cake is a classic

    I am a lover of mayo so I put it on sandwiches. I also mix it with yogurt and make a cucumber, onion, and tomato salad. It give a bit of a tang.

    Mix with pickle relish and make a tartar sauce for fish.

    Make coleslaw. You can buy the shredded bags of cabbage and the recipe is on the back.

    You can use it to bread things. Coat item in mayo, seasoning and panko bread crumbs and then fry or bake.

    Make homemade ranch dressing with it.
