    Greetings from the irrationally hot Las Vegas!

    I've been scouting out my new chow-horizon out here in Sin City, and while I really haven't had a bad meal yet (knock wood), I find myself wanting to cook for myself more often.

    That said: Which is the proper red/hot sauce that is used in bi bim bap? Does anyone know a brand name I can go by?

    Most recipes online say "hot sauce" or even "red bean paste," which is equally confusing.

    Look for or ask for something called kochu-jang. It's the slightly fermented chile paste that is made with red pepper powder, glutinous rice powder, and some malts.

    This (I think) is what you normally get with bi bim bap.

    I can't think of any name brand off the top of my head...(I just looked at the jar in my fridge and all the label is entirely in Korean). But I always try and get different brands, and have never really found too much difference between brands.

    in Eating Korean by cecilia lee (which I haven't cooked from yet, but is a very nice accessible read), she mentions that for bibim bap you use seasoned gochu jang, which is gochu jang mentioned above combined with half as much sesame oil, 1/4 as much soy sauce, sugar and garlic

    I've seen this for sale at korean markets as well.
