Yesterday at H-Mart Niles I encountered a shrimp I had never seen for sale in the
Mid West.
I purchased 6 for three people.
Cleaning revealed they were full of roe after the small alimentary canal was removed.
I fanned the tails and removed the outer carapace on the heads.
Tempura batter of self-rising flour and corn starch combined with carbonated water yields a very light almost translucent crust.
Fry in peanut oil.
They were the best cooked shrimp we have ever eaten heads and all!
Fresh, they would have been a sashimi lovers delight!
Combined with cherrystones on the half shell and green beans, green onions and sweet potato tempura along with Frixiniet, we each only ate one shrimp.
