Happy New Year - almost! In "Cooking For Good Times", Paul Kahan's new cookbook, he states "Here in Chicago, sea bass comes in on Wednesdays. It all goes to one distributor, and then it gets sold to a major grocery chain in the city. So I go straight to the source on Wednesdays."
Does anybody know the distributor or the major grocery chain? My first guess on distributor was Boston Fish Company, but it's only a guess... I don't recall ever seeing sea bass from Greece in Jewel, so I suppose it could be Mariano's, [but I don't shop there, so IDK]
