I'd suggest saving your time and money on this class.
If it's anything like it was when we went about a year ago, the class is packed, it's all demo, and you don't learn much. They provide a pamphlet with recipes and try to sell their "paella kits". We didn't know it going in, but they also provide a multi-course meal with the paella as the main. None of the dishes that day were very good. Perhaps it was a funky experience for us, as I've since been to Cafe Babareeba and had pretty decent paella (amongst other things).
But if you're really interested in making paella, I'd recommend buying
Penelope Casas' book and then stuffing yourself silly at Cafe Iberico with your savings.
