The 12 Dec issue of New Yorker has a marvelous article by Ian Frazier called "Hogs Wild". Apparently the feral hog population of the US is accelerating rapidly. Frazier spends some time with people who have a major interest therein--gov't. wildlife people and hog hunters. Should have talked to some of our bbq people, seems to me.

Anyway, it's a fun article, and bodes well for the future availability of lean, gamey piggy-meat. It isn't online, unfortunately, but maybe next week they'll put it in the archive.

I know a lot of people who hint wild boars in rural Ohio and eastern Tennessee. I do not think that you'll see wild boar on the market as those guys are pretty possessive of their game.

The meat that I've had is pretty dry and gamey as the animals do not have much fat running through the meat.

From my understanding the boars are great for "making bacon" with the resulting piglets becoming more tasty through the generations.

I agree that the article was great, both informative and laugh-out-loud funny at times. But it sure didn't make me want to eat feral hog.
