    Hi all!

    I tried a potato pancake recipe last night *yum* Served with sour cream, apple sauce and a touch of dill, it was heaven on a plate. However, I was a little disappointed because it turned out to be just like a pancake-shaped hash brown. Don't get me wrong, I like hash browns too, but this is supposed to be a potato pancake! Could someone tell me what I might be missing? The recipe I used called for just a tablespoon of flour, an egg, some baking powder, salt, pepper and onion. Is there insufficient flour here?

    Maybe try grinding/grating the potatoes finer. They shouldn't be so much shards a la has browns as they should be almost a fine mush (which you squeeze the moisture out of before frying).

    Personally I like mine on the hashbrown-y side.

    A little more egg and flour in your mix might do the trick too. At least some of the grated potato should be finely chopped. The squeezing is critical. Either lay in a supply of clean side towels, or squeeze over a colander. Either way, you'll probably end up with starchy water everywhere.
