...god knows I've been hankerin' for a New Orlean's roastbeef/debris po-boy. I can't remember the first time I had one and, actually, had forgotten all about them after a period of decades when, oddly, I became afflicted with this savory, brown, meatiness smackdab in the middle of my brain...I couldn't shake it.
I'm more of a soft shell crab, shrimp, fried oyster, or Italian po-boy kinda guy, but damn if my Cajun/Creole afficianado grandfather didn't plant some enzyme or somethin' deep inside that recently decided to unravel it's little, tasty, barbed feelers...fussin' wth my junk...inspiring this...urgh...craving...
Residing as I do in Chicago with a dearth of decent Cajun(a couple Heaven on 7's---Jimmy Banos's restaurants are okay...I like eating there occasionally---...I think they'd pass my Opa's muster...then there's maybe a Southside place or two...and that's IT)...I really don't know where one'd go for a roast beef po-boy.
And, well...out've all the divers things I've cooked over the years I've never made a pot roast.
So, I bought me a beef, beef stock(I make my own chicken stock, but shy away from beef...dunno why...I shouldn't), we had some young garlic, fresh rosemary, red spring onions, and merlot. Braised that bitch for about 4 hrs. Shredded it. Put back in the liquid to assimilate some.
I decided to err on the side of jus...didn't wanna fuck with a thickener.
mmm...barely passable Chicago sub rolls(commercial Chicago bread is basically shit...it's a known fact...even some of the beloved artisan bakeries are crap...tho' no one will admit it), beef and jus, mayo/prepared horseradish combo slathered on the bread, sliced tomatoes...mmm mmm
oh...and I roasted the rest of the onions with a russet about gone to pot and fresh chives/rosemary...etc.
I know I'm missing some Gulf Coast flavors but halfway to a threeway...or, rather, somewhere betwixt Chicago Italian beef, a French dip, and New Orleans po-boy...hit the spot
