    I am looking for an at-home pastry chef with a commercial kitchen. Like one that already supplies a small restaurant or caterer -- and would like a little bit more business. I am a caterer in Highland Park and would like a low-med volume of desserts made on a consistent basis at this person's home. Any ideas or names?

    It seems to me that you might have a little difficulty filling this requirement. I don't quite understand what you are looking for either. At home and commercial kitchen are the problems for me. It is my understanding that it is near to impossible to get a home kitchen certified for commercial production. When I was catering I'd rent the kitchen from our church.

    Thanks for your quick response. In my catering business, none of my chefs specialize in desserts -- and besides, I don't have the right equipment that pastry chefs might need nor the right amount of additional room. So I need to buy a low-volume of desserts needed for my business. So the person doesn't need to be "at-home" -- they just need to be a person who can sell me the desserts by the item (or bulk of items). The reason I mention "at-home chef with a commercial kitchen" is because I already source truffles from an at-home chef who does have a health dept-approved commercial kitchen. So I was thinking the same type of arrangement. Does that make more sense?

    I make pastries at my pastry shop not at home. If you would like to do a tasting let me know what you are looking for. There are people who make stuff at home but they are not licensed, so that is your choice to make.

    Recently, Delighful Pastries accomodated my special request to create a passion fruit mousse cake. It was absolutely fantastic. The cake layers were very light, and the passion fruit flavored mousse layers were fluffy and airy, not too sweet, with just the right balance of sweet and tart. The cake was frosted with whipped cream that had also been very delicately flavored with passion fruit. I ordered the cake for a private party and it was the hit of the party. Mrs. M
