    The Garfagnana is a region in the north of Tuscany close to the medievil walled city of Lucca. The scenery in this part of Tuscany is different as the Garfagnana is made up of two different mountain forms, the Apuane Alps on one side and the Appennino Tosca-Emiliano on the other with the Serchio river flowing in the valley between them. This makes for a very picturesque and unique area of Italy, but most special is the way the area has held on to it's traditional gastronomic products, some of which are now protected by Slow Food.

    These traditional Gafagnana products include locally made pecorino cheese, unique flavours of honey, porcini mushrooms, various salumi including the 'Il Bazzone' prosciutto, potato bread, chestnut flour, ancient farro, formenton otto file (8-row maize) and then there's all the tasty local recipes passed on for generations that incorporate these foods.

    The best way to experience the history, flavours and knowledge of these foods is with Sapori e Saperi Gastronomic Adventures, a local tour company who aims to keeps these culinary traditions alive and share the amazing flavours with the world. The adventures are for small groups (1-8 people) tailor made to suit the clients' wishes and foods of the season.
