But it's been pie before -- not very good pie, necessarily -- but remember when Poppin' Fresh Pies was really big (it later became Baker's Square) and spawned a lot of short-lived imitators?

I could see a place that did all kinds of pie, from meat pies to quiche to fruit pies to cream pies, doing really well, especially if it also served good coffee and was open in the early mornings and late at night. If you add in Khaopaat's hand pies, it could have a drive-thru.
