I'm probably the only one who this would make happy, but how about a trendy new taco place that only serves al pastor tacos, cooked on spits, with charcoal? And have four or five spits going when its busy, to give them all time to get crispy before being shaved and served. There would be homemade tortillas, good salsa, etc. etc.. I'd pay between 2 and 2.50 for a consistently great al pastor taco.
I'm with you except for a few things.
1. I'd much rather it not be trendy at all.
2. Carne Asada Al Carbon as well.
3. Pollo Asada Al Carbon too. (Boneless skinless thighs only!)
4. The option for dark meat chicken fajitas.
5. One special guisado del dia
