Almost forgotten I made a double batch of puff pastry dough over the holidays, so this morning seemed like a good opportunity to use it for some mini raspberry danish...

And larger danish filled with sweetened cream cheese, some leftover frangipane cream and and leftover cinnamon-sauteed apples, drizzled with a bit of vanilla icing. Now, I just need to fine some neighbors who are up this early and willing to eat it!

I've been up for hours. Does that count?

    Hi,

IF you found no takers, you could show up at the dessert exchange later today.

I do make my own puff pastry (and danish dough), but I always make them in 3-lb batches, since it's so steenkin' time-consuming and the dough keeps very well in the freezer. I can't see myself to committing to 4-5 hours of dough-making every time I want coffeecake or cream horns. :-)

I think you should open a bakery. Your creations look great. I would buy stuff from you.
