    At school, I'm enrolled in a class that explores employment contracts and it's ways of incentivizing and disincentivizing employees. There is a final project due that requires us to analyze a specific industry of our choice and understand the types of employment contracts therein and how it effects performance and behavior. I, of course, decided on the restaurant industry. It would be impossible to explore every type of restaurant and its structure so I've decided to look at three types: local solely owned single-location (any local joint), more upscale multi-chain restaurant partnership (Miae Lim's network, Morton's, etc), global fast-food chain (McD's, BK, etc.). I wanted to get a broad view with these three types of organizations.

    Most of us work or have worked in the food business so if any of you guys can offer any insight into employment, compensation, and profit-sharing structures of any of the above type of restaurants would be appreciated. If you can offer the types of compensation (positiong, salary, tips, bonuses, etc) that would be best. Bitching about poor pay is welcome (extra data points).
