Kluwak Kupas...in this new feature called
Key Ingredient, chefs will be challenged to come up with a use for a mystery ingredient. In the inaugural installment, Julia Thiel challenges Alinea's Grant Achatz to come up with a recipe which incorporates kluwak kupas. Each week's chef decides who gets challenged next and which ingredient he or she will have to work with. For next week's challenge, Achatz has handed the challenge off to Curtis Duffy of Avenues, who will come up with a use for Chinese black beans.
Eager Cleaver...LTH contributor Mike Sula checks in with Rob Levitt, who discusses, among other topics, his new Butcher & Larder in Noble Square, which is set to open next week.
Prize Pork...the aforementioned Sula, along with Martha Bayne and Heather Kenny provide brief reviews of several spots in town which serve charcuterie.
