    A friend of mine is coming to town next week, and when I asked where he wanted to go to eat, he mentioned he had just seen a chef on the today show from Chicago who puts everything on a bed of salt. The only other hint he could remember was that he also has a restaurant opening in NYC (he thinks). Anyone with any ideas who this could be?

    David Burke's Primehouse serves a beef carpaccio served on a block of rock salt (the same salt used to age the meat).

    That would make sense - he already has a place in NYC, and he is high profile enough to be seen on the Today show. Thanks!

    David Burke it is. I saw his appearance on the Today Show and he had a few blocks of the Himalayan Salt they use to age the meat that he was showing off and using as serving pieces. I went into some detail about why he likes the salt. Here's a linkto the recipes he showed that day.

    Itto Sushi is currently also serving sashimi "special" on a block of Himalayan salt which is re-used.

    Obviously this isn't the chef in question but...

    HI,

    Last week I was at H-Mart during a rare midday visit. I usually visit mid-evening when all the shops in the vestibule are closed.

    Two friends were cackling wildly at claims a chunk of Himalayan (I think that was the name) salt could cure cancer. This was a bit of gallows humor since both are cancer survivors. I don't know what they were selling these salt blocks for, though they looked fairly sizeable. If you desire to own a block of salt for yourself, then this might be your opportunity.
