    Hi,

    At the end of October, Greater Midwest Foodways will have a symposium on "Beef: From Plains to Plate." I like to include in the program handout and website information on Beef related festivals and programs. While I do my best to keep track of these things, I know there are many more eyes and ears who may know just a little bit more.

    I learned from talking to some about the Burgoo Festival in Utica, there is plenty of Angus raised in LaSalle County. It is one of the reasons why their Burgoo is heavy on beef, though there is some pork, too. From Bruce Kraig, he advised Burgoo-style dishes in our region are also referred to as Chowder. I will admit I have not yet seen it myself.

    You might want to contact the farm state agricultural programs and meet up with some of the Meat Science professors. They have student competitions on grading carcasses. I would recommend the University of Nebraska- Lincoln.

    Personally, I am working with some friends in Central Nebraska to tour one of the large slaughterhouses near Omaha in the coming months.

    Wish that I could attend the event but I will be on vacation that weekend.
