    Hands-On Saute 101: One Technique, Many Dishes • Sunday, November 2nd
    Easily one of the most useful methods in the kitchen, the technique of sautéing is something every good cook should master. You will leave this class with a firm grip of the technique and various ways to apply it. We'll discuss the anatomy of a good sauté pan and discover why not to use non-stick pans. To practice our new skill, we will create four sautés using fish and chicken with a different pan sauce for each. We'll learn the importance of deglazing, fond and reducing our sauces and of course knowing how to check our meat for proper doneness. A few tips and tricks will help us learn this one technique used for endless easy dishes. This is a terrific class for the beginner cook or those just looking to brush up on their skills.

    Come and enjoy four hours of holiday gourmet cookie baking! In one afternoon we'll make a variety of traditional and gourmet holiday cookies. Bring your favorite cookie recipe to share.     The Basics: Classical Sauces and Vinaigrettes • Wednesday, December 17th
    Learn all the Classical French sauces including Veloute, Espagnole, Bechamel, Hollandaise and Tomato which form the basis for hundreds of variations. Our Spice Up Chef Instructor will also teach you how to make your own home-made Vinaigrettes. ($65)
