    Celebrating the preservation of food, traditions and custom. The menu for this dinner was created with the Slow Food Ark in mind. In order to save a species, you have to eat it! Many products listed on the menu come from the Slow Food Ark, a list of foods that are under the threat of extinction. Other menu items are prepared with traditional recipies that might be in danger of becoming lost. And throughout the meal, we will also celebrate some long honored customs.
