    All,

    I am based out of Chicago. I was asked to host a class on the road in Alabama. It is geared towards sauces, seasonings and marinades and how they are made from a manufacture.

    We have recently decided not to make the trek to AL. We will be hosting the seminar the same dates right here in Chicago. The flyer is being redone and will be up tomorrow. There is a brief description on the classes page.

    - learning about rubs and how they vary so much.
    -Making bbq type sauces and understanding ingredients that go into them.
    -learn the science behind all manufactured style products and how you can adapt techniques for yourself.

    Registration is back open until Sun Jan 24.

    All,
    We have a new schedule of individual classes posted in addition to the seminar. I really appreciate the local interest we have been getting. This site is awesome.

    We also host weekend open cookouts for people interested in learning about what we do.
    There is no planned out agenda or course outline for those, just a lot of cooking, discussions and drinking.:)

    I will post those dates at random.

    All,

    We have had great interest from this site and have almost filled up the class. I am looking forward to next weekend very much. I have room for 4 more people as of today.

    I am also offering a 1 day-partial attendance at $90. Some people can't get off work all 3 days so I thought this may accomodate those folks. I suggest attending Friday since a majority of the schedule is happening then.
