    Chicago Foodways Roundtable presents

    World’s Columbian Exposition:
    First in Technology, First in Food

    The 1893 World’s Columbian Exposition was held in Chicago to recognize Christopher Columbus’ arrival in the New World some 400 years earlier. The Fair changed the way Chicago viewed itself and the way the world viewed Chicago. Over 27 million people attended the Exposition during the 6 months that it ran. What drew the crowds were many firsts. No other world fair could match the size and scale of the Chicago Fair. The Fair was the first mass display of the use of electricity to illuminate large areas. The Fair was the first to have an amusement area – a “Midway”. There the public could see and ride the first “Ferris Wheel”. The Fair also featured some firsts in food and food technology. These foods, and the technological context in which they were developed and commercialized is the subject of this presentation.

    Chuck Valauskas has for some 25 years worked to identify and protect new technologies. As an intellectual property attorney, he has worked on many important food products and technologies in those years, not only for large food companies but also start-up businesses, restaurants, and chefs. Over those years, he has come to recognize and appreciate the importance of Chicago to world and the food industry.

    Chuck Valauskas is a partner in the Chicago law firm of Valauskas & Pine LLC. He received his J.D. degree from the DePaul University College of Law and his LL.M. from the Northwestern University School of Law. Chuck speaks on a regular basis around the world on intellectual property and related business topics. He is a source of information to many publications on the topic of food, food technologies, and intellectual property, including the Wall Street Journal and the New York Times.
