    This fall, SUSHISAMBA rio (504 N. Wells Street) will continue its interactive Sushi & Sake 101 classes; the restaurant’s signature sushi and sake tasting led by Sake Sommelier Hayes Swope. The unique experience will allow guests the opportunity to sample a variety of SUSHISAMBA’s 60 plus sake offerings as they are paired with delectable bites by Chef Dan Tucker. The eventful evening concludes with a guided “do-it-yourself,” lesson led by Sushi Chef Shigeru Kitano, who will demonstrate a step-by-step tutorial for making sushi at home.

    The fall 2010 Sushi & Sake 101 classes are held from 4 to 6 p.m. on the following dates:
    • Tuesday, September 14
    • Tuesday, October 12
    • Tuesday, November 9

    Swope will kick-off the evening, taking guests on an inspired sake journey. From nigori to namazake, Swope will provide keen insight into the history if this beloved Japanese libation while noting major differences in sight, smell and taste.

    From here Chef Kitano will take over, providing students an insider view into the art of Japanese sushi making, highlighting all aspects from the best places to purchase fish to how to perfectly cook rice and everything in between. All participants will receive an informative take-away booklet to help in applying what they have learned at the class to their personal cooking.

    Reservations for Sushi & Sake 101 are recommended and can be made by calling SUSHISAMBA rio at 312.595.2300. Classes run at $75 per person and come on a first come, first serve basis (20 person maximum).
