I was debating between the Cook's Illustrated individual meatloaf and a recipe entitled
'The Best Meatloaf I've Ever Had'. Who can resist the umami meatloaf from Damen Wise of Craft Steak?
So proud of myself for making the grocery run late last night so I could cook if snow-bound today. After spending *WAY* too long on a sofritto and various prep for the recipe, the verdict? S'ok. Nice glaze.
I made one loaf with shiitake/porcini mushrooms and one without. I plan to bring one serving without shrooms (for Leek, I believe). Anyone else?
