A dinner built around simple, but focused cooking using ingredients and produce from the surrounding Chicago area! This dinner will be an 8-course tasting menu with a heavy focus on the in-season vegetables of late summer and early autumn. The menu is not vegetarian as it will include meat courses as well.

Myself: As for a little about myself; I have been working in professional kitchens for the past four years. I recently just moved to Chicago upon returning from living in Copenhagen, Denmark for two months. I was doing a short stage at Noma Restaurant in Copenhagen and studying the food and cooking culture of that area. Before leaving for Denmark I was living in Milwaukee and working at Sanford Restaurant under Justin Aprahamian. I spent the first two years of my cooking career working in Madison at Merchant Restaurant where I spent a great deal of time focusing on establishing relationships with local farmers and their products, as well as a strong focus on butchering and cooking with all parts of a vegetable or animal. I look forward to cooking for you.
