    For the past few decades, single subject food books, such as sugar, potatoes, beans, rum, and coffee, have emerged from an academic specialty into a popular genre. During the past ten years more than three hundred serious single subject food books have been published and dozens more are in process. Why have authors– academic and popular– selected single subject foods as themes? Why has the genre taken off? What are the strengths and weakness of this approach? What is the future of single subject food books? Participants (some Skyped in) include Ken Albala, author of Beans: A History; Becky Sue Epstein, author of Champagne: A Global History; Bruce Kraig, author of Hot Dog: A Global History, and Man Bites Dog: Hot Dog Culture in America, Michael Krondl, author of The Taste of Conquest: The Rise and Fall of the Three Great Cities of Spice; Michael Leaman, publisher Reaktion Books; Anne Mendelson, author of Milk; Mark Pendergrast, author of Uncommon Grounds: The History Of Coffee And How It Transformed Our World and For God, Country and Coca-Cola; Andrew F. Smith, author of nine single-subject books, including American Tuna: The Rise and Fall of an Improbable Food; and many others.
