    hi everyone,

    ok, the tour is now closed. i will take the two people on the waitlist. that is it. i have a total final count of 35 in my records, since i have three who are not listed on this thread. thanks to all for your interest. i hope this will be an enjoyable and educational experience for all who attend. we will see you all at 10am on saturday. you should be aware, wear comfortable shoes that are somewhat slip resistant, as there will be water and probably curds and tofu on the floors. we do try to keep everything neat and organized, but we can only do so much when things are running. also, try not to wear loose clothing, as i don't want anyone to get caught on machinery. ladies, please, no dangling jewelery if possible and if you have long hair, please have it tied back. that applies to men also. we will have hair nets, but it helps if your hair is already tied up. we don't have many chairs there, just a couple of benches, so if you like, you can bring in a portable chair if you need to sit during the q&a. there was a question of whether our products are already in shops. the answer is not yet. we are running production right now and a lot of the asian shops are going to carry our product but the types of products we have going right now are limited. hopefully, within the next two weeks we will have a full range of products in the markets. i hope i have answered most general questions now. if you have more and they are not pressing, please write them down and i will do my best to answer them during the tour. i will probably not be checking this board again for a few days so if you have any pressing questions or changes, please email me at sunxiensoy@gmail.com.

    Should we make a couple of reservations for lunch at the nearby places? Even if we split up, having 10-15 unannounced show up at one time might be a bit much...

    I'm enjoying some Sun Xien tofu already. Yesterday I unexpectedly found three varieties at Broadway Market (4879 N Broadway).

    Not sure where you got the Evanston address from but this is the location of the tour--granted, it was buried in a post in the middle of the thread--if we could edit the OP, that would probably be a good idea :D

    No. I knew that. It's getting from the south to Evanston that creates the need for me to bow out. Someone running the show in our house has to get groomed. :!

    I'd be interested in lunch. Right now, assuming it's not zero degrees in Chicago on Saturday, I'm planning on biking down. So somewhere relatively near SXS would be great, so I could just ride my bike to meet everyone at the restaurant after the tour.

    Since I am having trouble breathing, we are going have to bow out of the tour... Plus I don't think Kelly would like me sniffling, coughing and sneezing all over the tofu... :P

    wow, kelly was the very definition of a gracious host this morning, as she always is at her restaurant. her dad said it took an engineer 6 months to assemble their high tech tofu processing plant, and it was easy to believe. the cheng family is incredibly hard working and ambitious, and we are all the benefactors of the great care they take with everything they do. eating fried and fresh tofu, that had literally been created in front of our eyes was an awesome experience. thank you so much for taking an entire morning out of your busy life, kelly, for us. it was an unforgettable event. justjoan

    Totally agree, I had a great time today as did my guests. It was amazing and the entire Cheng family floored me with their grace and generosity. I am pretty sure had we stayed all day, the samples would have never ended! I wish Sun Xien Soy GREAT prosperity and the best of everything!

    Kelly, when you get a chance, a listing of where Sun Xien is available would be great - I would love to buy Sun Xien exclusively if and when possible.

    I know I saw the yellow tofu (and bought it unknowing!) at Golden Pacific. We really liked it.

    I'll add to the list of grateful friends and customers! The tour was truly one of the most interesting I've ever been on, especially considering that I've never been a tofu "fan"--I like it but I don't got to any lengths to see it out. That has changed for certain--everything we tried today, from pieces hot out of the fryer to hot tofu "milk" to the wok-fried beans, to the fresh off the line samples were tangy, distinctive and wonderfully rich tasting. Thanks for showing us what great tofu should be--and I look forward to seeking out your products soon!!!

    A very interesting morning, thanks to the Chengs. Cabbagehead and I talked all through dinner about the tour and what we saw, going on at greater length than our son would have liked. We found the tofu delicious, and the factory amazing.
