    We'll be sorry to miss seeing you Katie.
    There are some other non-LTH folks coming so no shortage of attendees
    I'd like to ask those who are still TBD on their items to try and firm up.
    We are a bit light on the appetizer/finger food section
    and can always use drinks - soft drinks are also welcome for those who don't imbibe.
    cans preferred :wink: (I always end up throwing away most of those 2L bottles....

    Hi,

    I'm sorry to advise Helen and Stephen cannot attend. Unexpected family business is interfering with this great opportunity. Stephen went to school in NOLA, so this is right up his alley. The tree in front of their home has beads from prior Mardi Gras wing dings entangled in the branches.

    They really wanted to attend. Hopefully their luck is more favorable next year.

    to the best of my knowledge that does free up the muffaletta spot...
    however sweet potato pie is pretty well loved around here too...
    I'm trying to keep everything updated in the first post as quickly as I get informed.

    I'm more of a savory cook than a sweet cook.

    I was about to perpetrate my first attempt at from-scratch pie dough on all y'all. It might not have been pretty [or backed up by a refrigerated crust].

    Instead, I think I'll bake a nice loaf of sesame-crusted bread and fill it with olives 'n stuff.

    Which leaves a sweet potato pie for someone . . . .

    I am sorry we will miss it. I have to work all day, and Mj has an opportunity to spend the day with her kids in town that she doesn't want to miss. I am glad that someone else has taken up the mini-muffaletta banner. Laissez les bons temps rouler!

    we seem a little short on dessert, so i'm also bringing coconut macaroons; possibly dipped in chocolate, i haven't decided yet....

    Hi,

    Grits have been simmering since 7-something. I borrowed a gallon slow cooker, so yes there will be a gallon of grits. They seem to be coming along nicely at the 5-hour mark.

    Pecan pie out of the oven around 9:00 am.

    Just counting the time until I head over.

    We'll be leaving the house in a few minutes. The pimento mac & cheese cups turned into a baking dish of mac & cheese because after making one pan, it was too messy and time-consuming to portion them all.

    But it tastes awesome!

    Thank you Elaine and Frank, for once again opening up your home and hosting this terrific get-together. It's such a nice event, with excellent food, music and company. I can't even begin to describe how delicious all the food was. Those were some mighty fine contributions. I'm sorry we had to cut out earlier than we would have liked but we really had a great time while we were there.

    In addition to Onj4ever's pan,
    I also have acquired a large round tupperware container- sort of cake-size
    Let me know if it's yours I'm always happy to leave things out for porch pick-up,
    or I work in Rosemont near the casino if you want to arrange a day-time pick-up.

    If anyone has pix, please post them
    I had good intentions and a fully charged camera,
    but was so busy taking care of everyone I forgot to even pick up the camera....
    oh well- living life instead of recording it. :wink:

    I consider it a personal failing that I'm usually not very enthusiastic about jambalaya and etouffee (I've been hurt too many times), but the versions by Ronnie and Tom/Sharon, respectively, were just fantastic, as were so many other items on the buffet...and the tunes!

    JOAN'S PIMIENTO CHEESE
    1/2 lb. extra sharp cheddar (i like tillamook extra sharp, or cabot extra sharp)
    4 oz. roasted red bell pepper(1 large, or 2 smaller ones; weigh after removing skin/seeds) unless you can find fresh pimiento peppers. i won't use the jarred ones or jarred bell peppers, they taste different(bad)
    1/4 c. mayo (.14#)
    a splash worcestershire
    a shake or 2 (or 3) of cayenne pepper (do NOT use red pepper flakes)
    a little chopped onion (1/4 of a med.size)
    to get the texture i like: use small holes on a box grater to grate the cheese. then put everything but cheese in a food processor and puree till smooth. then add the cheese and process just to mix.
    traditionally served at every southern cocktail party as a white bread sandwich. i use pepperidge farm thin sliced sandwich bread. 1 batch pimiento cheese will make 10 sandwiches = 1 loaf. if you want to serve it with crackers, make sure they are salt free or it will not taste good. baguette slices are also a good option. enjoy! and feel free to share the recipe.
