    Steven L. Katz, author of “Chicago’s Big Apple” (The Chicago Tribune, January 10, 2007) reveals the whole sugar cinnamon glazed story of the baked German apple pancake in Chicago.

    Steven L. Katz is an author and food writer whose recipes and articles have appeared in Gourmet, Bon Appetit, The Chicago Tribune, The Washington Post and more. Steve Katz grew up on Chicago’s North Shore eating at Walker Bros. The Original Pancake House on Green Bay Road and has visited the original Original Pancake House in Portland, Oregon -- where he met founder Les Highet. Steve’s parents grew up on Chicago’s North Side and they loved the apple pancake at Chicago’s Red Star Inn..

    Hi,

    I had an extended conversation with Steve Katz last week, who can best be described as a Food Wonk. He not only knows how he makes the pancake, he knows precisely how each ingredient interacts with each other at a molecular level.

    There will be a tasting after the program, I suggest advising in advance to allow us to accomodate you better. Of course the last minute decision to attend is never discouraged as we have plenty of room.

    To date, there are 4 folks that RSVP'd for this saturday's event.... me included. Will keep you update if the number changes.

    They only have dinner service at 6 PM on Saturdays. They are on spring vacation at this time, If you desire dinner, then I would call to verify. Kendall's website is www.kendall.edu
