    CHOICE OF TWO MENUS FOR A FRIDAY NIGHT CLASS

    COUPLE’S NIGHT DINNER MENU
    APRIL 13th or 20th or 27th

    TAVA PRAWNS (SHRIMP MASALA)
    Jumbo shrimp gently sautéed in a spice mixture of onions, tomatoes, poppy seeds and fresh coconut.
    CHICKEN BIRIYANI
    A Hyderabad moglai dish, Curried tender pieces of chicken cooked with fragrant basmati rice.
    KAATI KABOBS
    Ground beef or turkey or lamb mixed with chopped onions, cilantro, spices and shaped into sausages and steamed. Then rolled in fried tortillas.Garnished with onion,mint,limejuice.
    DUM ALOO (spiced potatoes)
    Boiled potatoes cooked with fenugreek leaves, sour
    cream, powdered cashews and spices into a thick
    creamy sauce.
    BAKALAVA
    Flaky filo dough with walnuts, sugar and cardamom mixture in the middle.

    CHICKEN TANDOORI
    Chicken leg quarters marinated in yogurt and spice mixture and baked in the oven.
    GOLDEN FRIED SHRIMP
    Butterflied shrimp marinated with spices and corn
    Flour. Deep fried and then sautéed with finely
    Chopped cilantro, green chilies, garlic and ginger.
    BAGAARA BAINGAN
    Baby egg plant cooked whole with spicy ground masala into a thick curry.
    DAAL MAKHANI
    Whole lentils boiled and seasoned with fried onions, hot curry paste and sour cream
    CARAMEL CUSTARD
    Easy Flan made with Nestle crema, condensed milk, and eggs and flavored mildly with cardamom powder.

    My girlfriend and I attended Shoba's "Couple's Night" class last Friday, so I thought I'd post a quick review. This was the first Indian cooking experience for me, and the first formal class for her--previous attempts were limited to cooking out of a cookbook.

    The class was very nice. Shoba had prepared a few dishes not on the menu ahead of time (tandoori chicken and a chickpea dish I can't recall the name of), as well as some snacks. Once everyone arrived (there were six of us), Shoba demonstrated how to cook each dish listed on the menu while those of us in attendance followed along and helped out.

    Once all the dishes were prepared, we all ate together. The food was delicious. The quantities were huge, and we took home many leftovers (in fact, I've been eating the leftovers all week).

    We had a great time. Anyone who is on the fence on whether to attend on of these classes should go. Shoba was a gracious host and good teacher.

    I'll second that. I've attended two classes, both of which I enjoyed tremendously. Not only have I prepared the dishes Shoba demonstrated (she gives you copies of her recipes), but I've applied the techniques I learned to many other wonderful Indian dishes. I'll be going back again as soon as my schedule permits.
