Ooohhhhh...I usually do a pretty boozy warm bourbon caramel sauce with my bread pudding. I'm thinking adding the bacon to that, but leaving the bread pudding itself bacon-free might be the way to go. Plus it has the benefit of not making the bread pudding off limits for the vegetarians.
