LUX Bar and The Great American Cheese Collection invite you to join us for a tasting of a selection of exceptional artisan American cheeses
We will be gathering at LUX Bar (18 E Bellevue, Chicago) for our first in a series of Cheese Salons to taste a round of new cheeses and recent arrivals. We will also feature cheeses from Goldin Artisan Goat Cheese, Westfield Farms, Brazos Valley and Nicasio Valley Cheeses. Cheeses will include: Soft, Creamy, Blue, Stinky, Aged, Bloomy Rind, Goat, Cow and Raw. Chef Michael from LUX Bar will prepare several appetizers featuring a few of the cheeses. LUX Bar will serve beverages at special reduced pricing

Richard Faltz, founder and wine maker at Fox Valley Winery, will be pairing several of his wines with a selection of midwestern artisan cheeses.
Meet Coleen Graham, Maitre Fromager and one of only two certified Master Fromagers in the country.
Master Cheese Maker Fons Smits from Ludwig Creamery located in Fithian, Illinois will showcase several of his newest cheeses as well as his originals. The farm and plant are located near Danville, Illinois and his cheese making facility is truly state-of-the-art. His cheeses include both the classic and the innovative.
Joining Fons will be A'isha Bauer from eSutras. She is a flavor chemist and has blended several highly concentrated culinary herb and spice oils for you to try.
