We all have to eat—but is the food we find on our plates good for us? Join us for this one-day course to hear from the people who actually grow, produce, butcher, distribute, and buy what lands on our plates. Our morning panel will be moderated by Dan Rosenthal, Founder of the Green Chicago Restaurant Coalition. Mr. Rosenthal will be joined by those who are working to bring locally grown food to our markets and sustainably raised animals to our butcher shops. You’ll have an opportunity to learn how to read labels and better understand the many terms (“organic,” “free-range,” “antibiotic-free”) that we encounter every day. In the afternoon, we will look at what’s on our children’s plates and how it got there. Kerri McClimen, who is working on the Pew Campaign on Human Health and Industrial Farming, will moderate a panel on efforts to serve healthy food to our kids.
