In the western Balkans, the gumno is a threshing floor, consisting of a low circular stone wall and a stone floor. Traditionally, donkeys or horses were tethered to a post at the center of the gumno and separated wheat and chaff with their hooves. Light breezes would then continue to separate wheat from chaff. The gumno, when not in use, became a place where people would gather to discuss local events and share a glass of rakija, brandy. This presentation will introduce foods of Montenegro and its Adriatic Coast. It will focus on the different influences on local foods while emphasizing the social nature of food and culture in the region.

Charles A. Baker-Clark is a professor of hospitality and tourism management at Grand Valley State University where he teaches courses on food and society. In addition to his academic background, Charles has a degree in the culinary arts. From September of 2014 through May of 2015, Charles worked as a Fulbright Scholar in Montenegro where he studied food and society in the region. Charles brings with him, an understanding of food in Montenegro from the standpoint of scholar, cook and traveler.
