    I had to poach some apricots for a dessert. I just used the apricots, water, sugar and vanilla, reduced remaining syrup down. Now, it's a very pleasant, lightly flavored apricot simple syrup. Any thoughts on how to use it for a good, alcoholic drink?

    You could use it in an Old Fashioned. There are a lot of variations in this recipe. Normally I muddle an orange slice, a drunken cherry, a sugar cube, a few shakes of bitters, top with ice, 3 oz of whiskey, and stir. With the peach syrup, I'd probably omit the orange slice and cherry, and replace the sugar cube with some of your peach syrup.

    I muddled a leftover poached apricot with some bitters, added some of the apricot simple syrup, a little sparkling water and whiskey. Loved it!

    I didn't even notice that. thanks for the suggestion though. It worked out well and it was a pretty color, too!

    At the gourmet shop where I used to work we used either peach or apricot tea to plump our raisins. We would brew the tea and then put in in a container with the raisins and store it in the refrigerator. When we needed raisins for a recipe, we'd scoop out what we needed with a slotted spoon. If you poach apricots again and don't make a syrup, it's another nice use for the liquid. :)
