    It's probably obvious why I'm asking this :wink:

    We're going to have loads of mint infused simple syrup around the house tomorrow and I'm trying to think of things I could mix it with so my daughter can have a celebratory drink along with the adults. My first thought is just adding a splash of seltzer water, but I'm hoping people who are more creative/knowledgeable about cocktails than I am may have better suggestions (I could probably use a break or two from Bourbon myself at a few points tomorrow as well).

    You could just substitute unsweetened black tea for the bourbon and let her have her own "julep".
    Just don't get the glasses mixed up :mrgreen:

    You could also add it to a tropical juice - pineapple, mango, etc, perhaps with a little grenadine.

    you can make a virgin mojito just omit the rum. This way you can celebrate both derby day and cinco de mayo!
