    We have 3 small barrels laying around.

    2 will be for hot sauce, one will be a cocktail.

    Any suggestions on a cocktail to barrel age?

    Negroni? What kind of barrel? Keep in mind that things take on barrel notes much quicker in small barrels than large, in case you weren't aware.

    I figured it wouldnt need a ton of time.

    Manhattan and Negroni were my first two instincts, but I was wondering if anyone had any exp to share.

    You could try making Tepache. Though a Rob Roy sounds good.

    A nice mix between a Negroni and a Manhattan is the Boulevardier.

    2 parts Bourbon or Rye (I prefer Rye), 1 part Campari, 1 part Sweet vermouth. I've "aged" this for a week or two in a bottle with both charred oak and charred cherry wood with really nice results. You can also swap out the Campari for Aperol.
