    Just got the Terroir Coffee newsletter. Featured in the November issue of Wine Spectator is an article on George Howell. Apparently Howell believes green coffee should be stored in a deep freeze until needed. Howell demonstrated the marked difference in quality with a cupping between La Minita beans held in different ways:

    2004 Beans stored in Jute bags
    2004 Frozen Beans
    2006 Frozen Beans
    2006 Beans, allowed to stale for a few weeks

    The results? the frozen green beans, even from 2004, sparkled, while the others were all but absent of the characteristic La Minita Maple/nutty/peachy flavors, and had even developed off-flavors.
