    Hello group,
I was just turned on to LTHFORUM by a friend. What a great and helpful Resource! I am the owner of Tailwinds Distilling Company, a small family run distillery in Plainfield. We make our Taildragger rum the old fashioned way (before carbon filtering) using the best grade molasses. We also make Midnight Caye 100% blue agave spirit one of only a few made here in the US. We do EVERYTHING here at our facility by hand from fermenting through bottling. I am excited to be a part of this forum.

    Welcome to the group, Toby.

Having had the privilege of tasting some of your lovely, fragrant, very smooth rum (now available at Whole Foods), I can attest to the care you put into your work. Hope you find companionship and encouragement here on LTHForum.

Finding a rum distiller in corn country was such a novelty. As someone who lectures on rum history, a visit was a must. I love the fact that you have a family connection with the old New England distillers. Hope you continue to do well.

So Toby, any chance you are distributing "down-state" say, Champaign?

Not yet, but hopefully soon. We are with Stoller Wholesale for Illinois Distribution. I know that they hit the Binnys and a few other places down there so I am sure we could make it happen.

Very good! I know Stoller distributes in our market here in Gibson City so who knows! Continued great fortunes, hope to make it up for a tour/tasting soon!
