Blanching the spuds, shaking, resting and then frying in higher heat is the "secret" of making good white potato fries, too, and I wonder if this procedure is skipped at other places that serve fried sweet potatoes (which seem frequently too soft and mushy and not brown enough, which is always surprising given the sugar content of this variety).
