    this weekend i was going to ravinia w/some friends who live in the area. i was going to bring honey 1 but they were closed for vacation. they mentioned some bbq near them as another option so instead they p/u from the bbq pit. anyway, decent/respectable dry rub q (a bit tough, could have used another hr or so) but what i wasn't prepared for were the sweet potato fries. absolutely amazing. picture al's fries only sweet like candy. no one was able to resist. we had two lg orders @ $3.99 ea between 6 people. not one left. by the texture, i imagine they blanch them in lower temp oil first, drain then finish with higher temp oil as a proper frite should be.

    just wanted to share this... the fries alone are worth the ride.

    They have an interesting dry rub that they call "memphis style" that is completely sugar free which is nice if you are diabetic :) I like the sweet potatoe fries too.

    huh, I'll be. I don't recall the SP fries being all that revelatory; in fact, I remember being them being Sysco-certified, as I used to have the same fry in a Northwestern cafeteria. But, hey, in an age when Thomas Keller uses frozen spuds, who can really say? BP may have changed their fry or the cooking method.

    Blanching the spuds, shaking, resting and then frying in higher heat is the "secret" of making good white potato fries, too, and I wonder if this procedure is skipped at other places that serve fried sweet potatoes (which seem frequently too soft and mushy and not brown enough, which is always surprising given the sugar content of this variety).

    (Every time I see the title for this thread, I think of "Amazing Grace," and every time I think of that song, I inevitably think of Sarah Silverman :roll: )
