Don't know if anyone's in the market for a smoker, but Sears has a pretty good deal on their propane model for $90.

    HI,

That Kenmore Verticle Smokers looks very similar to a cold smoked cabinet I saw over the weekend. I wonder if it could be modified conveniently for cold smoking. The one I saw had the coil removed from the bottom to avoid excess heat.

What my memory is unclear whether he used a soldering iron in wood sawdust to gently smoke the meat at home or in the smoker cabinet I saw.

    Regards,

What do you mean by "right kind"?

I'm not being silly, I was honestly thinking of buying this but if it's no good please enlighten me.

He meant "if you want a smoker for cold smoking (smoke with no heat source - for cheeses, certain fish preparations, etc.) then get the right kind for cold smoking". This is a decent price for a propane smoker for occasional use.

    LOL

OK, so throw the newbie a bone...
Would a gas smoker like this work or should I stick with a charcoal/hardwood model?
If it's the latter and I don't have the ~$400 for a WSM can I get by with something cheaper?

Haven't been $180 for quite a while, and that was for the no longer available old model. New 18.5 inch WSMs can be had on Amazon for $279, a little less, with terrific service, at Russo Ace, a local hardware store.

You can also use a standard Weber kettle grill, which is cheaper (especially if you find a used one on Craigslist or something). The kettle grill is serviceable for smaller smoke jobs, such as chickens and ribs. If you want to smoke pork shoulder or brisket often, it is probably best to invest in the WSM. Check out Low and Slow for instructions and tips about using the Weber kettle for smoking.
