If your veggie person will eat cheese and eggs, I like this baked spinach dish.
Sautee some chopped onions and garlic in a deep pot. Clean and wash about 1lb fresh spinach, don't dry it. Add the spinach over low to med flame and cover. When the spinach has wilted, stir it into the onion mix.
Stir in 1 beaten egg, some fresh ground pepper and about 1/3 cup grated parmesean cheese. Put into a buttered baking pan and sprinkle top with more parm cheese.
Bake for about 15-20 minutes in a medium oven until the egg sets.
I've substituted frozen spinach for fresh off season and varied the quantity based on what I have on hand. A recipe like this has a lot of wiggle room
