    I don't have a lot of time.

    I know I could bring cheese, make a cake, pick up a pie, or maybe devil some eggs.

    Any other thoughts for quick sides, preferably vegetarian?

    Brisket will be smoked.

    If your veggie person will eat cheese and eggs, I like this baked spinach dish.

    Sautee some chopped onions and garlic in a deep pot. Clean and wash about 1lb fresh spinach, don't dry it. Add the spinach over low to med flame and cover. When the spinach has wilted, stir it into the onion mix.

    Stir in 1 beaten egg, some fresh ground pepper and about 1/3 cup grated parmesean cheese. Put into a buttered baking pan and sprinkle top with more parm cheese.

    Bake for about 15-20 minutes in a medium oven until the egg sets.

    I've substituted frozen spinach for fresh off season and varied the quantity based on what I have on hand. A recipe like this has a lot of wiggle room

    asian coleslaw--super easy--no cooking required. Crunch up a package of ramen noodles, mix with cut up bok choy and napa, add cilantro, green onion, carrots if you feel like it, almonds (toasted are nice but not necessary), and toss with a dressing made from sesame oil, the packet of ramen seasoning (shroom is nice), rice wine vinegar, grapeseed oil (usual vinaigrette proportions + the touch of sesame oil), half a lime, a bit of oj to taste, salt and pepper. Sure fire hit :D

    Remarkably simple (you probably don't need any recipe), but I got raves at a potluck I took it to recently, and recipe requests:

    Clean and pat dry some fresh asparagus, drizzle with olive oil, and lay flat on a cookie sheet. Broil on high (I did three minutes, turned, and two min). Add a bit of lemon vinaigrette. Take either warm or cold.
