So I have some smoked pork chops and I am not sure what to do with them (in a gift basket).
Just cook them in a skillet, maybe with some apple sauce on the side?

Sure, that works . . . maybe with sauerkraut too. Or you could add them to a soup/stew, maybe with white beans and escarole or potatoes . . . endless possibilities there. You could also incorporate them into a cassoulet. And if you want minimal effort, nothing wrong with just heated up on its own, or on a sandwich with some sauteed onions.

I love to put them with kilbasa in sauerkraut, kind of like choucroute garni.

    1 -
Sautee onions, add apples, cook, add caraway seeds (optional), cook, stir in some tomato paste and wine or beer to deglaze pan, toss in smoked chops, smother with saurkraut (I rinse mine, you may prefer not to) simmer until warmed through
    2 -
smoosh some butter in a casserole dish, lay out sliced apples in the bottom, (no need to peel), toss in a handful of dried cranberries, sprinkle with cinnamon and flour (just a little). Dust pork chops with seasoned salt, set on top of slices, cover with leftover stuffing. drizzle with a little apple juice, dot with butter. Bake.

These are two different options? I like it. I think there is also onion sausage and ham in the basket so I think this could work.

On occassion, I have made a dish very similar to this but with a layer of sliced potatoes and onions on the bottom. Parboil the potatoes first so they cook through. I have used dried apricots, but never cranberries. I cook mine with a splash of lager beer.

I've made a dish similar to yours, d4v3, but with cream added over the pork.
