    to get those fine little frizzy curls of fresh carrot, radish, etc. that chefs use as a garnish on sushi and ceviches? The ones that are almost like clumps of curly hair...

    I would think that a lemon zester would get me more of a "powder", like lemon zest. What I want to get is long, thin, curly "hairs" of my vegetable.

    I think you need to go look at a lemon zester; they generally have 5-6 sharpened holes at an angle that you draw along the surface of the fruit, producing the curls you are looking for.

    Maybe I need to look at more lemon zesters. The ones that I own have a myriad of sharp edges and more or less vertical openings, they form a "powder" of the lemon or lime rind (zest). I use them regularly when making the special Frontera recipe margaritas.

    Am I a code warrior now? LOL. As an aside, I'm also a member of an auto enthusiast forum that automates the renaming of a posted URL, which makes it much less challenging. But challenges are good, right?

    A conventional zester and/or microplane type is the wrong tool for the job.

    You want to make that fine "angel hair" from carrot, beet, daikon, right? These spiral vegetable slicers (like the Benriner) come with three blades of varying thickness. You can also remove the blade from the machine in order to cut vegetable ribbons.

    Yes, angel hair from carrot, beet, daikon is exactly what I want to make. Thanks! The lemon zester that was shown would probably work in a pinch for a small quantity, but I have visions of faster and more uniform "hairs", and the spiral slicer seems to be the ticket.
