    Has anyone seen non-Chinese, meaning domestic or from Quebec, fresh (not frozen) rabbit in a supermarket or meat market recently.
    I wonder why some years ago (in the mid 80's )it was possible to find fresh rabbit from some Southern states in stores such as Treasure Islands for example. They would be reasonably priced and packed freshly dressed ready to cook in plastic wrappers.
    Nowadays it has become almost impossible to find any around Chicago.
    I tried the frozen Chinese rabbit that you find in Korean supermarkets such as the large one in Niles. They are completely inedible and I have some serous doubts about the quality and integrity of the food they were fed.
    Any suggestion?

    I would guess any decent butcher shop could get one for you on order. You can get a live one at John's Live Poultry on Fullerton. Call ahead as they don't always have them. They'll kill it for you if you want.

    I'm pretty sure Chicago Live Poultry and Aden Live Poultry carry live rabbits. Best to call ahead.

    I've had the frozen Chinese rabbits, and while I wasn't terribly impressed, I found them fine. What made them inedible?

    We're going to the farmer's in South Bend tomorrow to pick up our turkey. I know they usually have fresh rabbits too.

    John's Live Poultry on Fullerton is where I have been obtaining my fresh rabbits for 15 years.
    There is big rabbit producer in the USA http://foods.pel-freez.com/ but I can't find their rabbits anywhere.
    I'm glad i always pass on the Chinese rabbits!
    In one store I found them labeled 'Product of USA' AND 'Product of China'!-Dick

    This isn't Chicago proper, but I've seen it dressed at the meat counter at Valli Produce in Hoffman Estates.

    99% sure I've seen them at Paulina Market--I'd call first.

    I believe Bari on Grand caries fresh rabbit in their butcher case.

    Thanks for all the suggestions, I'm making Spanish rabbit stew in a week for some friends. I'm going to be calling around to acquire fresh rabbit. I will be sure to post back about where, the quality & how my stew goes!
