    About 12 years ago I use to get a watery brownish/red salsa that had a smokey taste and was very spicy at a Mexican restaurant in Winston Plaza in Melrose Park. It had many seeds. It was similar to a salsa I had in the early 1990s at el Charco Verde on Taylor St. I believe it contains guarillo or ancho peppers or both. I remember it being served in a volcanic mortar & pestle. I am looking for a recipe to make it at home.

    Smoky taste probably from chipotles.

    Could also have ancho - both chipotles and anchos are smoky, although chipotles far spicier. Chipotles will also lend more red color. And there could still be guajillos in the mix, but not for smokiness.

    Didn't really taste like chiptole which I have cooked with often. I would have thought that maybe they would have roasted the peppers first.

    Don't rule out roasted chile de arbol either.

    Sounds to me like a Pasilla pepper salsa. El Barco on Ashland used to have a decent version of the salsa. Probably still do. Haven't been there in a few years since I move out of the "hood" but I still sometimes crave that salsa and their super flavorful refried beans.

    As far as I recollect this salsa is made by toasting the dried chiles on the stovetop in a pan in oil, with lots of garlic cloves until it starts to puff and char a little. Then let cool and then blender with a little of the oil. and I don't know what else. Sorry.
