Hi,
I read about this yesterday. They take a live carp, then fry the body but not the head. The fish comes dressed to the table in sauce et al with the mouth still moving. This is their gold seal proof you're being served the freshest of fish.
My feeling if the fish was eviserated and fried, then what you see of the fish's mouth moving is just a nervous reaction like a chicken running without its head.

They do this with lobster too. They show it to you in a bag at the table, they take it back to the kitchen, take all the meat and guts out, and place the lobster head back on the plate, and it's still moving and they eat the meat like sashimi.
